Plaited Pescatarian Surprise

Recipe yields 20 servings

Surprise Casing

1 ¾ cups of boiling water

2 cups flour

½ cup cornmeal

2 teaspoons baking powder

2 teaspoons vegetable oil

1 teaspoon salt

 

Surprise Filling

3 medium sized Banga Mary Fillets (you can de-bone the fish yourself too) flaked into small pieces

1 teaspoon Mrs Dash Italian Blend

1 teaspoon Mrs Dash Original Blend

2 tablespoons of Island Spice Fish Seasoning (or any other alternative you have)

*If your fish seasoning doesn’t contain salt, add salt to taste

 

Materials: Cutting board, rolling pin, tea towel, paper towel, plate, dinner knife, oil for frying and frying pan

 

Method

Season flaked fish with Mrs Dash Italian Blend, Mrs Dash Original Blend and Island Spice fish seasonings and set aside to marinate for 5 minutes.

Combine all the dry ingredients (flour, baking powder, and cornmeal, salt) and mix together

Add boiling water while continually stirring the mixture.

Add vegetable oil and knead the dough.

Pace in a bowl and cove r with a damp tea towel and allow to set for 10 minutes

After the ten 10 minutes have elapsed, dust the cutting board with flour and roll out half the dough

Cut into medium squares and place filling in the middle in a lengthwise manner.

Follow the directions below to wrap the filling in the casing

Preheat 1 inch of vegetable oil in a skillet

Gently place each wrapped surprises in the oil and fry until golden brown

Remove and place on a plate covered with paper towel to absorb excess oil

Allow to cool and enjoy. Side Note, it goes well with sweet and sour sauce 🙂
